makes 1 10-inch pancake
  • 1 c chickpea flour

  • 1 tsp salt

  • 1 tsp freshly ground pepper

  • 4 tbsp olive oil

  • 1 c lukewarm water

For the topping:

  • Smoked Salmon

  • Creme fraiche

  • Thinly sliced lemons

  • Fresh dill

  • Pickled onions 


Preheat the oven to 350º.

In a large mixing bowl, whisk together the chickpea flour, salt, pepper and 2 tbsp olive oil. Slowly our the water in. The mixture should look like heavy cream. 

In large 10in skillet, heat the remaining 2 tbsp of olive oil in the pan. Pour the entire mixture into the pan and wait for it to bubble on the edges. Place the pan in the oven and bake for 10-15 minutes until the pancake is firm and golden brown. 

Remove the pan and finish with desired toppings.
