PLUM & GINGER SHRUB
makes 2 cups
- 1 lb plums
- 1 cup granulated sugar
- 1 piece ginger
- 1 cup apple cider vinegar
- 1 cup water
- ice & chilled sparkling water for serving
There are two methods for making shrubs, this is the heated method and is a bit quicker. Chop the plums into 1-2 inch cubes, discard the pits. Place the plums in a heavy-bottomed pan, add the water and sugar. Stir until the sugar is dissolved and the water reduces a bit. The mixture should look like a very loose jam. Remove from the heat and add the apple cider vinegar. Note: adding in seasoning like freshly grated ginger, thyme, and cardamom pods are all optional but add so much flavor complexity.
Strain the shrub into an air-tight container and store in the fridge until serving. The shrub keeps in the fridge for up to one month, and will likely last longer. Discard or keep the strained fruit, it’s delicious as a jam or topping on a dessert.
To serve, pour 2oz of the shrub in a glass over ice, then top with sparkling water.
